Chicken Soup For The Tummy

Do you enjoy homemade soups? They really are quite simple to make, and can be a healthy, hearty meal. It’s probably only a little over an hours work, if you have a food processor, but takes about 6 hours, to have the finished product, ready to eat. After cooking a chicken, I usually leave a little meat on the cooked carcass, and freeze it, as I like to wait until I have 2 or 3 of them to make chicken soup. Chickens cooked on an enclosed standalone rotisserie make excellent soup. Leave some of the skin and outside parts for the soup, as it is dark, crispy and flavourful, and makes a nice tasty broth.
I put 2 or 3 carcasses in a stock pot, and cover them with cold water. Cover, and bring to a boil, then lower the heat and simmer for 4 hours. Remove from heat, and strain the broth into another pot. Set the boiled chicken aside to cool. Put the broth back on the stove, and bring it to a boil. Add between ½ - 1 cup of barley, or brown rice, depending on how thick you want the soup. Reduce heat and simmer for an hour.
Peel and wash several good-sized carrots, some turnip, a couple of medium sized potatoes and a large onion. Cut into pieces to fit in your food processor, and grate them. Add to soup and simmer for another hour. Remove chicken meat from the carcasses, and cut into small pieces, and add into the soup. Be careful of the tiny bones that are prevalent in the neck of the carcass. Season with salt and pepper to taste.
One of the worst things about canned soup from the store is the high salt content. An average can of soup contains over 50% of your recommended daily salt intake. Did you ever notice how a can of 25% sodium reduced soup costs about 50 cents more than the regular soup? It shouldn’t cost so much more to eat healthier meals - so by making your own soup, you can control how much salt gets added, and use alternative spices to flavour the soup. I also make mine quite thick, so a small bowl keeps your tummy feeling full for hours. Enjoy!
